A simple philosophy with big goals for all of your senses. We not only want you to taste and smell the unique character (AKA terroir) of the hops and grains we grow and brew with but we also want to provide you an immersive experience that quite literally lets you follow the path of the brewing ingredients from farm to glass.
In deciding on the styles to brew, the sky's the limit.

A brewery on a hop farm? 250 acres of beautiful scenery with a new ground up brewery?? There are so many options and, of course, so many different hop varieties to showcase.
Naturally one might expect us to brew every beer to be aggressively hop forward and in an environment where IPAs reign supreme, you might think we would brew nothing but hazy juice. There will be a time and place for those styles but fortunately hops can be showcased in a variety of beer styles with a wide range of applications, so we’re bringing an opening list of beers that offer a glimpse into the possibilities of our unique hop terroir.
What is "terroir"?

It’s what makes our beer taste so good… well, that and a great brewer!
In its simplest definition, terroir is a “taste of place.” Take hops for example, regardless of which variety you grow or where in the world you grow them, the things that happen to those plants in a given season (think rain, amount of sunshine, average temperatures, the type of soil you’re growing in, etc) will all impact the flavor and aroma produced from region to region.
Our soil, the most perfect Hadley Silt Loam (thanks prehistoric lake bottom!), and growing conditions contribute so many fruity (citrus, bubble gum, berry) and nuanced flavors and aromas in our hops that can’t be found in other places - allowing for some old school hops varieties to step into the forefront of new school flavor profiles (read: juicy IPAs).
And, when we can’t source from our farm, we source from other farms and businesses as locally/regionally as possible.
